Our Story

From the Restaurant Line to the Family Kitchen

Joey spent over 20 years in the restaurant business โ€” 17 of them as executive chef at the Chill Grill in Downtown Wilkes-Barre. "Executive chef" was a nice title for someone who did everything: the prep, the line, the menu, the late nights. He didn't know how important those years would turn out to be.

About five years ago, Joey's wife and youngest daughter were both diagnosed with celiac disease. Overnight, the family's relationship with food had to change. As a chef, Joey refused to let that mean settling for less. He threw himself into learning how to make gluten-free food that was genuinely, indistinguishably delicious โ€” especially desserts.

The cinnamon rolls came out of that mission. People who tried them couldn't tell the difference from a traditional roll. Word spread. Orders started coming in. What began as a father's way of caring for his family quietly became a business.

Today Joey is known around the area as the cinnamon bun guy. He still bakes both gluten-free and traditional rolls โ€” because great food should be for everyone at the table.
